Red Beans 1 1/2 lbs. red beans 1 to 1 1/2 gallons of water 1/4 pound salt pork or bacon salt to taste 2 or more jalapenos for flavor Pick beans thoroughly to get rocks and clods out. Bring red beans to a boil. Add salt, salt pork and jalapeno when beans come to a boil. Move to a lower or moderate heat and let simmer until tender for about three hours. If you add water, do not add cold water.
